Guest guest Posted April 6, 2001 Report Share Posted April 6, 2001 Spicy Peanut Noodles www.enduring.com -12 ounces linguini or angel hair (pastariso or papadini are the best brands) -1/3 cup hot water -1/3 cup smooth peanut butter -2 teaspoons soy sauce -2 teaspoons vinegar (preferably rice vinegar) -- may substitute lemon juice -2 scallions, finely chopped -2 cloves finely minced garlic -1 teaspoon sugar -- (or alternative sweetener) -1/4 - 1/2 teaspoon hot red pepper flakes -1 teaspoon sesame seeds -1/4 chopped peanuts 1. cook the pasta per box instructions. drain. set it aside (keep it warm) 2. blend the water and peanut butter. 3. stir in the soy sauce, vinegar, 1/2 of the scallions, garlic, sugar, and red pepper. 4. stir the sauce into the pasta in a large bowl. sprinkle with the rest of the scallions, sesame seeds, and chopped peanuts.
