Guest guest Posted March 27, 2001 Report Share Posted March 27, 2001 Curried Lentils with Spinach Source: Mark Bricklin's Lose Weight Naturally Cookbook (Rodale) - (adapted) 1 cup lentils 1 Tbsp. olive oil 2 cloves garlic, minced 1/2 lb. spinach leaves, washed, stemmed, and chopped 14 oz. can plum tomatoes 2 Tbspl tamari 2 Tbspl curry powder 1/4 tsp. grated ginger root 1/4 tsp. cinnamon 1/4 tsp. nutmeg Wash lentils. Cook until tender but firm. Heat olive oil in large pot and when hot add garlic. Saute for one minute. Add spinach leaves and steam until they wilt. Add lentils and rest of ingredients.
