Guest guest Posted March 27, 2001 Report Share Posted March 27, 2001 Vegetarian Mexican Rice 1 Tbsp. vegetable oil 4 cloves garlic, finely chopped 5 round sliced scallions 2 diced celery stalks 1 seeded and chopped red bell pepper 1 1/4 cups uncooked rice 2 cups vegetable stock 2 cups chopped tomatoes 1 Tbsp. chili powder 1 tsp. basil 1 tsp. oregano 1 tsp. cayenne pepper 1/2 tsp. cumion 2/3 cup peas salt to taste Saute garlic and scallions in oil. When garlic becomes translucent, add remaining ingredients. Bring mixture to a boil, stirring constantly. Cover and reduce heat to low. Simmer until rice is cooked through.
