(malted carob chips Carob Chip Cookies 1/3 cup organic canola oil (or sub) 1/2 cup pure maple syrup 1 teaspoon vanilla extract (or sub) 1 organic egg 1 3/4 cups oat or brown rice flour 1 teaspoon baking soda 1/2 cup carob chips (unsweetened) dash allspice (optional) Oil two baking sheets and preheat oven to 375 degrees F. In a medium sized mixing bowl, combine oil, maple syrup, and extract. Beat the egg and stir into the oil mixture. Gradually stir in flour and baking soda to form a stiff batter. Fold in carob chips and drop by the teaspoon full onto the baking sheets. Bake for 10-15 minutes until lightly browned. Remove from oven and cool. Makes 3 1/2 to 4 dozen. Note: I use 3/4 cup chips.
