Macaroni and Cabbage Dinner

 

 

*This is delicious! The ingredient list isn't too exciting, but the

completed product is SO good! The kids you serve this to will never

know

there is cabbage in it!

 

Cashew gravy (recipe follows)

4 cups cooked macaroni (may use corn or quinoa or rice)

4 cups chopped cooked cabbage (do not overcook)

1 tsp. salt

 

Mix gravy, cabbage and macaroni gently. Put in casserole. May put

crunches on top. Bake 30 minutes or until hot at 350 degrees.

 

Serves: 10 -- 1/2 cup servings

Calories: 147 calories per serving

 

Cashew Gravy

 

2 cups hot water

1/2 cup cashews

2 tsp. onion powder

2 Tbsp. cornstarch or arrowroot starch

1/2 tsp. salt

 

Blend until smooth. Pour in small pan and bring to boil. Use as is for

 

white sauce. Add 1 Tbsp. nutritional food yeast for gravy. Variations:

 

May use soy sauce instead of food yeast and salt.

 

32 -- 1 Tbsp. servings
