Guest guest Posted March 8, 2001 Report Share Posted March 8, 2001 Tofu Ice Cream 8 ounces soft tofu 2 teaspoons vanilla extract 2 Tablespoons vegetable oil 6 Tablespoons sugar (or alternative sweetener) 3/4 cup rice milk Mix all ingredients in a blender until smooth. Pour mixture into a low container and place in the freezer. Stir frequently during the freezing process (to prevent crystallization). When ready to serve, transfer the frozen dessert mixture to the refrigerator for about 10 - 15 minutes. Serve and enjoy! You can add 1/2 cup cocoa powder or carob powder.
