Guest guest Posted January 31, 2001 Report Share Posted January 31, 2001 Pancakes 1/4 cup oil 1/4 cup sugar (or alternative sweetener) egg replacer equivalent to 1 egg 3/4 cup cornstarch 3/4 cup potato starch 1/4 tsp. xanthan gum 1/2 tsp. salt 1 1/4 tsp. baking powder 3/4 cup soy milk In mixing bowl, combine all ingredients except soy milk. While stirring, slowly add soy milk, being sure to remove all lumps from the batter. Batter will be thin. Pour batter onto hot, greased griddle to make pancakes of the size you desire. Turn pancakes over when lightly browned. When other side is lightly browned, remove from gridle and serve. Makes about 12 -- 4 " pancakes. Serves 4.
