Our version of risi bisi, a refreashing, traditional side dish from Venice, in made with brown rather then the usual white rice. 2 cups cooked long or meduim grain brown rice 1 cup fresh peas, shucked, or frozen peas, thawed 1-2 TB lemon juice 1TB extra virgin olive oil 1 tsp. sea salt Steam or Blanch the peas just until they are tender but still firm and bright green. Mix cooked rice, leamon juice, oil, and salt together. Add drained peas, toss gently, and serve, garnished with slices of lemon at room temperature.
