Guest guest Posted January 30, 2001 Report Share Posted January 30, 2001 Chilled Cantaloupe Soup Source: Chatelaine Magazine Aug 2000 Prep time 10 minRefrigeration time 2 hoursMakes 4 cups/4 servings 2 Medium-size very ripe cantaloupes 1/2 to 1 cup soy milk1/2 cup thickly sliced strawberries1 tsp fresh grated ginger1 to 2 tsp freshly squeezed lime juiceFresh mint leaves (optional)Sliced strawberries (optional) 1. Cut cantaloupe in half. Use a spoon to remove seeds. Cut melon into wedges then slice close to the peel to remove the fruit. Cut into large chunks. 2. Place chunks, soy milk, berries, ginger and 1 tsp of lime juice into a blender. Blend until smooth. Add additional soy milk and juice to taste. 3.
