(10 oz) fozen choppen spinach, thawed & squeezed dry 2 C. shredded Zucchini 1 med. Potato pelled, shredded 1/4 c. finely chopped onion 1/4 c. flour( can use rice flour) 1/4 - 3/4 tsp salt 1/2 tsp. pepper 1/4 - 1/2 tsp. gound nutmeg 1 egg substitute, needs to be a binder Applesauce, optional In a bowl, combine the first 8 ingred. Stir in egg subsititute mix well. Drop batter by 1/4 c. into a well greased hot griddle. Flatten to form patties. Fry until golden brown. Turn and cook until second side is lightly brown.
