Guest guest Posted January 16, 2001 Report Share Posted January 16, 2001 Peppered Corn Fritters Source: mother-in-laws cookbooks many years ago 1 1/4 cups fresh or frozen corn, thawed 1 cup finely chopped sweet red pepper 1 cup finely chopped green onions 1 1/4 cups flour ( for gluten intoerence rice flour works here) 2 tsp. baking powder 1 tsp. ground cumin 1/4 twp. pepper 1 cup soy or coconut milk 2 to 4 tbs veg oil In a bowl, combine the corn, red peppper, and onions. Combine flour, baking powder, cumin,salt,pepper. Stir in corn mixture. Gradually add milk, stirring ntil blended. In a skillet over Med. heat, heat 2 tbs. of oil. Drop batter by 1/4 cup into skillet.
