The little bit of fat from the soy mayonnaise is not that much and it has some good complex carbs: Crockpot Mixed Vegetable Bake Adapted from vegetarian southern crock pot recipes at http://southernfood.tqn.com 2 cans Creamed corn - 17 oz each 2 cans/bags frozen Green beans; cut - 16 oz each 2 cans/bags frozen Peas - 16 oz. Each 1 can Tomatoes - 17 oz 1/2 cup Mayonnaise (use Nayonnaise or other soy/no egg mayonnaise to make vegan) 1 tsp Tarragon 1 tsp Basil 1/2 tsp Salt Pepper Combine all ingredients in crock pot. Mix well to blend herbs. Guest guest Posted November 16, 2005 Report Share Posted November 16, 2005 This sounds really good. I wonder if it would work if it were made in another way, not in a crockpot. I'm guessing it wouldn't because of the mayonaise. But I could be wrong. (It's happened before) I do have a crockpot; a mini-one: it's a quart and a half size. I only use it to make applesauce.
