My latest 'discovery' in my kitchen (knew about em and ate em elsewhere) is sea vegetables and soy beans (both dried and the fresh or fresh- frozen variety). I could lose a little weight right now, sad to say. When I was somewhat immobilized earlier I gained a few pounds which should not be allowed to outstay their welcome. I am now able to exercise - lots of good walking! - and to spend more time in the kitchen to concoct nice light and nutritious meals. We had some great yellow split-pea soup with dumplings the other day that had my (luckily slim) husband going back for not only seconds but also thirds - and he's not a big eater! A little info about me: I'm an ethical vegan. Have been since 1981. I have 5 cats and 2 vegan dogs. It is so wonderful to share my veggie food with my two Beagles....they are so darn cute and just love veggies, grains and fruit. It is a stitch to see them carrying carrots around in their mouths. The younger Beagle will steal my apples from my lunch bag if I'm in a hurry and leave it on the bed with my satchel and purse as I get ready to leave for work. I enjoy reading all the recipes you folks post, although I am very bad at creating much for myself. I love to eat.....and I do like to cook, but I seldom have the time. I'm one of those people who cook enough for an army when I cook....just can't quite keep it simple or small. 'Course then I share with everyone at work. Mostly I am very content with a bowl of broccoli and rice or tofu pups and noodles or my favorite, eda mame; and of course I just love cubed and baked tofu with lots of garlic and Spike.... I for one never have much to say but stand in the background lurking at all the good info on here. I'm a member of several veg groups but have found myself in this one more and more lately. Since I retired and closed a few retail shops my activity level has plummeted. However my weight did NOT follow suit. Now tell me what's fair about that...lol. I've always had to watch my weight and what I eat but never as much as now. Chasing grandkids occasionally and gardening or painting just doesn't merit the lifestyle activity that staying constantly on the run in retail did. Sooooooo I will be coming here more and more as I said to see what's up in low-fat cooking vegetarian style. I've been a vegetarian since my mid-20's and now I'm 56 (ok ok Dec I turn 57 *sigh*). I've always cooked healthy for my family however they did not choose the veggy path quite as much as I did. I figured my kids suffered enough when they would wake up Easter morning finding carob covered sunflower seeds in their baskets and hidden balls of Tofu Delight instead of eggs. Bless their hearts...we laugh about it now but I was way too much over the line then. So I encourage you young mothers...do find a balance...lol. Having to admit I would rather include Soy in my meal than anything I have recently been aware of the 'Soy Scare'. I've read conflicting reports stating too much is not a good thing. Usually I shun any 'bad press' on Soy but this one interest me a bit. It states that it can increase a woman's weight gain because of the effect it has on the thyroid gland. Hmmmmm I just don't know. However I intend to do two things. Research it more and more while hoping we can discuss it on here and number 2...include more legumes and other plant based sources of protein in my diet forcing me to back off the Soy just a bit. Well there you have it Pat. Is that an earful or what? Thanks to you for getting this lady off her duff and getting involved a bit more in this fantastic and informative group. The very best and healthiest way to eat anything is in its whole, natural form, which may include raw for some items. The best way to have soy is to have it in the form of whole beans, eg. edamame (slightly salted steamed soy beans still in the pod, usually served as a Japanese appetizer) or soy beans cooked in various dishes. The next healthiest way to have soy is in fermented products, such as tempe. But I want to add more vegetarian meals to our menu. I am hoping to have vegetarian meals 3 -4 times a week. I had lost 70 pounds and last year I managed to put back on 60 of it. :-( We were remodeling our whole house, just me and hubby, so that meant a lot of take out pizza for breakfast, lunch and dinner. And whatever else was convenient and bad for us. I had surgery last month and wont be able to exercise and get back on my health plan until the new year. So I am trying to get new recipes and more information on vegetarian meals to help out with the health and weight loss. I have a vegetarian cookbook, that was put out by vegetarian times. I also have their recipe cards in a box that I will be grabbing one a week and trying. Plus I also grab recipes online and in my magazines. So far, I have managed to pass tofu off to my family and very little problem. The secret was not to tell them about it until months and months later. My hubby does have a problem with some of the meals I have made, but not too many of them. I cant make mushroom burgers again because that made him gag, but other then that I have done okay. Neither of us is big on vegetables but I am trying to change that. My plan for next year includes a vitamix, a soy milk maker, a wok and who knows what other toys. Last year I started making whole wheat bread with wheat germ and flax seed meal in it. It was HEAVY, but tasty. Not low in calories but it was good and wholesome. :-) My health plan consists of whole foods, low fat, and HIGH fiber.(35-40 grams daily) Add water and exercise and I am all set to go. I have a hubby and a 15 year old son. We want to get a couple dogs and a couple cats next year to make life a bit more interesting. I love to read, study and learn as much as I can about many things, cook, walk in the country, shop on Ebay, and laugh. That is my story. I have used gloves at my desk for years now. This year I found a pair that are mittens, but the finger part of the mittens folds back so that your figers pop out. I use those now at the computer. I bought mine through a catalog but I saw a pair in the hunting section of a store the other day. I also have a pair of socks that you throw in the microwave. They stay warm for about 20 minutes. Not much to walk in since they are filled with seeds, but they do help keep my feet warm when nothing else will. I spent a lot of time trying to find a solution to cold hands and feet. Guest guest Posted November 23, 2005 Report Share Posted November 23, 2005 Hi, I'm not saying I do this on a consistent basis, but a friend suggested preparing all the vegetables you like early in the morning and having them ready in convenient containers in the fridge for those moments when you feel like snacking or want to include them in a meal. She said she had carrots, celery, cucumber, red and green peppers, cauliflower and broccoli easily accessible in the containers and when she felt like nibbling she just pulled one out and if necessary dipped the vegetable in low fat dressing or yogurt for a treat. If you can be organized and have the willpower to go for the veggies instead of the carbs then you will be well on your way. This was in response to the mom who has a 10 month old and wants to slim down more in prep for baby number 2. Good luck. I have been very busy with my dogs and life in general. I need to work on losing about 10 pounds and this holiday stuff is just not helping. I need to really work on staying away from the sugar. Gosh, that is the hardest thing for me to stay away from and the office I work in doesn't help, there are always " treats " . I lack will power, however, in the last 2 years I have stopped eating meat, I have been coffee free for one year but only caffeine free for 57 days. Discovered there are a number of things going wrong all at once. Recently found out that I have two bulging discs in my back with nerve root damage, Spondylosis, Osteitis, my bones are fusing together and I have a Synovial Cyst in my spinal canal, in between the bulging discs that is pinching off my spinal cord. Can't get surgery for it, as I'm still too heavy and they feel it would cause more damage than do good. For more than a month now I've been suffering with terrible gall bladder attacks, the last serious one sent me to Hospital. Have had numerous tests and still going for more, would appear there is a huge gall stone interrupting the function of the gall bladder therefore my liver isn't functioning properly and all my blood levels are off. I've been very very sick... not able to eat at all, as every time I do, I immediately have an attack of pain. Not permitted to do Curves any longer because of my back and was told " You're lucky you are still walking " . I'm to begin looking for numbness leading to paralysis before they will operate. Not being able to eat has caused me to lose nearly 20 pounds in a little more than two weeks. I will probably be forced to leave the groups I belong to, as I'm hardly ever online these days, not only because of severe pain and discomfort sitting here, but because my dearest friend has once again abandoned me, for reasons unknown to me, something I'm sure I will never understand. It is just emotionally too draining to be online right now. The local hospital is expanding and will be buying my home to demolish it, therefore I'm going to be packing and figuring out where I'm going to move to, early in the new year, if everything goes as they have suggested, but then, what ever goes as one anticipates, that's what makes life interesting and exciting. I'm glad I stopped into the group tonight before bed, it's been a long day and there are many more coming. Take care everyone, enjoy the holidays, family and loved ones. Even though I'm not sure why you were immobilised in the first place... Sounds like some great meals you are creating, I would love to try some! I myself am a vegetarian and notmilker (no milk) but I eat a lot of delicious food, even my meat eating dad will try! I was shocked when he bought veggie burgers. My dad is a big time meataholic and cheesehead, but he seems to like veggie burgers and veg sausages. But he won't try soymilk. The point is that I'm mobile again now, eh? And another point, which I like to make now and then, is that some of us aren't able to go to gymnasia or fitness clubs or whatever and work out as many think we all should be dooing. Some have to exercise as best we can, considering the different hands we've been dealt, and my way is to walk - a LOT! Nice thing about walking is that you can do it anywhere and you don't have to drive to reach the place LOL > Sounds like some great meals you are creating, I would love to try some! That url has long been in our Links and many of us to the notmilkman's newsletter - but it can't be drawn to attention often enough, I figure, since imnsho most adults on this (N. American) continent use far too much dairy. Your Dad might like soymilk, btw, if it was incorporated in something he likes - such as a 'cream' of veggie soup. It's great for potato and/or potato and leeek soup, for e.g. Thanks so much for writing in and, now that you have broken out of lurkdom, don't go into hiding again or I'll come along and haul you out!
