Same way you do if you're Not vegetarian, only more easily LOL You keep the fats low, go easy on the sugar (or cut it out, is my advice) and, frankly, despite what you have decided to do for now re dairy, you eat *only* low fat dairy. Most new vegetarians gain weight or at least cease to lose weight because they replace me*t with cheese, milk, cream, etc. Don't do it. Turn to beans, lentils, etc. Use low-fat soymilk instead of milk - and just give that cheese away. If you can't do that entirely, then uses a little soy cheese, but I advise you to wait until you've been without 'real' cheese for a while before you try the soy variant - that way it'll taste more like what you think you remember LOL (Some of it is exceptionally good, and I love it, but it isn't 'cheese' it's cheezy in flavour). As for sources of protein, it's hard to find a vegetable that doesn't have some protein - not just beans and legumes. Also you might want to look at http://www.vrg.org/nutrition/protein.htm There are lots of other sites, but those are a start. The truth is, sad to say for the propaganda of the me*t industry, that one needs far less protein than 'they' say - including one's medical advisors (unless they're experts in nutrition and sometimes not even then).
