It has some fat and sugar, but not a real lot for the rest of the ingredients, so I will still file it with main and side dishes rather than OT for not really slimming. Apple Squash Casserole From Seventh Day Adventist cooking fair 2 medium butternut squashes, peeled, cored, sliced and steamed 2 Tbs oil 3 – 4 Tbs apple juice ¼ cup plus 2 tsp natural sugar (eg., Sucanat or Turbinado) ¼ tsp ground nutmeg 1 tsp ground cinnamon salt to taste 2 Rome Beauty apples, peeled, cored and diced 2 cups cornflakes, crushed ½ cup chopped pecans Preheat oven to 350 degrees. Mash squash together with apple juice, ¼ cup of the sugar, nutmeg, cinnamon and salt. Put the mixture into a greased baking dish and cover with the apples. Mix together oil, cornflakes, pecans and the remaining 2 tsp of brown sugar. Layer this mixture over the top of the apples.
