HOT INDIAN APPLE CHUTNEY This is one of my grandmother's receipes and has been tried tested for a few generations . All the measurements are mine and can be increased or decreased according to taste. Hope you enjoy it 500 g of apple|( Granny smith or other tart apples) grated. 1/4 cup of oil 2 whole dried red chilies 1 tsp of turmeric 1 pinch of Asefotida 1tsp of mustard seeds 1tsp of cumin seeds 2-3 tsp of concentrated tamarind paste 2-3 tsp of chili powder ( according to taste) 30 g of jaggery ( sugar can be substituted but taste differs) Salt according to taste 1 spring of curry leaves. For the powder 1 Tablespoon of mustard seeds 1 tablespoon of fenugreek seeds Toast the above for a minute or two till the mustard splutters and grind it to a fine powder Method: In a big pan (one with a lid would be preferable) Add the oil . When the oil is hot add the cumin and mustard seeds for 10 seconds. Add the whole red chillies and curry leaves for about 10 seconds. Add Asefotida and Turmeric. Add the grated apple at this time and sauté it for 10- 12 minutes . Add jaggery, salt and tamrind paste and keep cooking till the mixture leaves the sides and oil starts floating. Now add the mustard and fenugreek powder and chilli powder and cook it for 5- 10 minutes. Cool store in jam jars , refrigerate and use . The above mixture can be used in sandwiches or as a side for Indian tiffins …such as Dosa , Idli or chapattis .
