Recipe - Sweet Potato Chili (in response to request for recipes using apples)

Sweet Potato Chili

 

From “The Meatless Gourmet” by Bobbie Hinman”

 

“Based on an interesting Mayan stew..” replacing the meat with sweet

potatoes.

 

Makes 8 servings

 

2 teaspoons vegetable oil

1 cup chopped onion

1 cup chopped green pepper

1 15-ounce can tomato sauce (can use salt-free)

1 cup canned pineapple chunks (packed in juice), drained

1 cup water

1 ½ pounds cooked sweet potatoes, peeled and cut into 1-inch chunks

2 large Granny Smith apples, unpeeled, cut into 1-inch chunks

2 1-pound can kidney beans, rinsed and drained (or 4 cups of cooked

beans)

2 teaspoons chili powder (to make hotter, add more or add chopped

jalapeno pepper)

1 teaspoon ground cumin

½ teaspoon salt

½ teaspoon ground cinnamon

 

Heat oil in a large pot over medium heat. Add onion and bell pepper.

Cook, stirring frequently,

until onion begins to brown, about 5 minutes.

 

Add remaining ingredients and bring mixture to a boil. Cover, reduce

heat to medium-low, and

simmer, stirring occasionally, 45 minutes.

 

Serve in bowls or spoon over brown rice.

 

Each serving provides:

 

232 calories

8 gr protein

3 gr fat (0 gr saturated fat, 0 gr cholesterol)

46 gr carbohydrate

305 mg sodium

Apples?

 

Just dropping by to say Hi to everyone again - feeling a little bit more

human than when

last I posted LOL

 

Anyone any ideas for APPLES? I love apples, but somehow this time of

year (must be old

school memories of Hallowe'en!) I always think of them with particular

affection and

longing. What I like about them is that they're good on their own, fit

nicely in a jacket

pocket for a snack, and can be added to both sweet and savoury dishes -

not to mention

apple pie, apple crumble, apple sauce, etc etc etc

 

Would love some ideas, recipes, etc. Think, your average apple (is there

such a thing?

around 2-3/4 inches) has only about 80 calories and is full of all sorts

of good things,

quite apart from the tremendous texture, crispness, juiciness, flavour

<drooling - not a

pretty sight!>

I love apple cake or Carmel apples. It reminds me of Halloween my

favorite holiday.
