I have been moving away from using ANYTHING with these hydrogenated or partially hydrogenated fats and my blood test results have been much improved! The US government will soon be requiring food labeling to state if trans fats are contained. Anyhow, I saw Arrowhead Mills prepared pie shells at Whole Foods. No trans fats! The red and blue berries on the whipped topping look like a US flag (but Canadians and others can still enjoy this lower fat dessert). Patriotic Berry Pie 2 - 10.5 ounce packages of lite silken tofu (firm) 1/ 2 c maple syrup 8 tsp canola oil 4 tsp vanilla extract 1 prepared low-fat, no trans fats, graham cracker crust inch of ground nutmeg Slices of strawberries (about half a small pkg) Small container of blueberries Slices of banana (optional) Blend the tofu, syrup, oil, vanilla, and nutmeg in a blender or food processor until smooth. Pour into pie shell. I consider this recipe a keeper. Thank you for expanding my repetoir. I normally make my own pie shells, but there have been pie shells without transfat available in whole what for at least ten years at my local coop. I like the recipe for a " graham cracker " pie shell that uses granola. You need to freeze them if you keep them because they go rancid pretty quickly, otherwise.
