Guest guest Posted June 22, 2005 Report Share Posted June 22, 2005 I am the one who brought up the carbohydrate intolerence issue because my cousin has the problem. She eats moderate amounts of complex carbohydrates, but she cannot eat the amount that a normal vegetarian needs to eat. Diabetics are also urged to eat moderate amounts of complex carbohydrates--my husband is diabetic. The biggest problem I have with him is encouraging the ingestion of complex carbohydrates. Because other carbohydrates are so available, he tends to eat what is available instead of what is good for him. I am leaving today for a week long spiritual retreat in Encinitas, California and I am concerned that when he eats out he will eat " what is available " .
