Amazing that so many people are supposedly carbohydrate intolerant. Me, I'm skeptical, but that's a given LOL I worry that people who would benefit from moderate amounts of complex carbohydrates in their diet might be moved to think that they themselves are carbohydrate intolerant and therefore replace those carbs with something potentially worse for them healthwise and worse for the environment and the animals. It is possible that fewer problems would occur with eg., amaranth or another high protein grain. Also, sprouted carbohydrates might help - grain that have been sprouted until just a little tip appears off the grain.
