Cabbage: Frugal Food

Using frugal and healthy cabbage

Cabbage could be the most undervalued,

unappreciated vegetable in the

civilized world. It's a very frugal food; it

stores well, it's

versatile and it's cheap. It's also a very

healthy vegetable

 

Cabbage keeps very well in a cool place or in the

refrigerator as

long as it's uncut. Once a head of cabbage is

cut, wrap tightly and

keep it in the vegetable bin of the refrigerator.

It will sometimes

last for months like that, but don't expect it

to. Depending on how

it's been stored and handled before, it may not

keep more than a

couple of weeks. It will no doubt turn black on

the cut edges. Just

trim it off and the cabbage is fine to use.

 

If you have a whole head and the outer leaves

turn yellow, just peel

them off and eat the rest.

 

* Cabbage contains potassium, iron, calcium, B

vitamins, vitamin C

and vitamin D

* It's low in calories

* Fiber content is high

* It's a cruciferous vegetable, which makes it a

defense against

breast, stomach and colon cancers.

* Its juice has been used to heal peptic ulcers.

 

Now consider that you can find it in almost any

nation in the world

and it's inexpensive year around, but in the late

fall and again

around Saint Patrick's Day it's at the cheapest

price you'll find. An

extra head or two will keep so you'll save money

if you stock up a

little.

When cabbage is

cooked, it releases

sulfur compounds which is the " bad smell " of

cabbage, so don't

overcook it, and I'm told you shouldn't cook it

in aluminum.
