Guest guest Posted March 17, 2005 Report Share Posted March 17, 2005 I have just but a couple of cups of beans in the slowcooker along with onion, garlic, chillies, bell peppers, tomatoes, zucchini, etc., - you know the kinda thing ;=) Not a chilli sin carne, not anything but stewed beans, but by the time it's cooked 8 hours, been prettied up in the last hour with handfulls of chopped herbs and dribs and drabs of ground spices, it should be pretty okay. Felt the need for beans! So, was wondering: What's your favourite bean???? And why? Me, I'm torn between black (turtle) beans - for their lovely rich flavour - and garbanzos (chickpeas) for their wonderful texture and nutty taste. Over to your guys! These have so much flavor you almost don't need any thing but sautéed onions. Down south we always pour beans over rice... so a bit of a thickening of the sauce that the beans create during cooking is a big plus for sure. And there you have the true CAJUN STAPLE..... I like the baby limas - more tender and sweet than the large ones. I also like garbanzo beans for their versatility. They make a delicious " mock tuna " salad when mashed, and I even saw a recipe for a flourless cake made with pureed garbanzo beans (sorry that I didn't copy down the recipe). When I was a kid growing up my Dad got a hold of some giant white kidney beans that were just out of this world. The problem is that we lost the seed and we don't know how to replace it. Mom and Dad have flown away to heaven but the memories I had with them I will cherish forever, well, at least as long as I live in the land of the living that is.
