Guest guest Posted March 8, 2005 Report Share Posted March 8, 2005 Southwestern Salad 2 cup cooked brown rice 1 can black beans (drained and rinsed) 2 cup frozen corn kernels 1 red bell pepper (chopped) 1 small onion (chopped) ¼ cup light vinegar ¼ cup chopped cilantro leaves 1 minced jalapeno pepper (or cayenne to taste) 1 teaspoon chili powder Combine all ingredients.
