Guest guest Posted February 13, 2005 Report Share Posted February 13, 2005 For those very special eggs ;=) EGGS POACHED IN TOMATOES, IRANIAN-STYLE 1 Tbsp olive oil (or as little as you can get away with)* 2 garlic cloves, finely chopped, 1 smallish onion, finely chopped, 2 pounds (around 5) tomatoes, peeled, seeded and chopped Pepper and Salt to taste 4 eggs chives or green onion, finely chopped, for garnish Put the oil, if used (otherwise use a little stock to cook the onions and garlic), in a medium-hot pan to cook the onion and garlic until soft. Add the tomatoes, bring to a simmer and continue simmering for around ten minutes. When the sauce is looking thickened but still wet, add the pepper and salt and stir well. Make four indentations in the sauce, one for each egg, and break the eggs into the indentations. Cover and continue on medium heat until the eggs are set. Garnish with the chopped green onions. Serve as a light meal with flatbread. NOTE: We tend to add a sprinkle of dried chillies to the tomatoes while they are cooking.
