Hi - thanks for explaining! ;=)

Okay, Japan is in Asia ;=) I was thinking that there are parts of Asia (and Asia

is huuuuuuge with many diverse peoples - hard to generalize, was my point,

without 'othering' a whole continent, not to mention the diaspora!) which don't

use soy. And of course parts where they do, as you point out. And of course

Japan is very different to, say, Indonesia or China or Sri Lanka or . . . .

LOL

Btw, are your two Japanese friends strict vegetarians? If not, that wouldn't

really indicate much, would it? If they are, then that's says something else

about Japanese vegetarianism and soy - as practiced by two people ;=) I'd be

really interested to know.

Anyway, I wasn't asking for your sources as such - ya don't need to footnote

here by golly - just wondering who you meant by asian people.

Actually, I think it's true that many north american vegetarians (speaking from

my own place of residence as it is now) are delighted to find soy substitutes

for the meat (and perhaps dairy) they have chosen not to consume - and tend

to eat soy as much as they previously ate the other. Since the standard north

american diet is over-abundant in animal products, that means that a great

deal more soy is consumed here than would likely be consumed elsewhere

by non-meat-eaters. You know?

Frankly, I suspect that if I had to grab my meals out of a freezer case because

I

was working until all hours I would be more likely to eat soyburgers and soy

'chops' and 'steaks' and 'fillets' as well as all the ready-made veggie meals in

a plastic tray that contain soy more than seitan. So I'm not criticizing the

over-

use of soy - just a-thinking ;=)

Best, Pat ;=)
