Soak a handful of raisins & a handful of chopped driedapricots(+/- 1/4c each) in boiling water until plumped (20 min?). Saute chopped onion in olive oil. Add plumped fruit. Addkale. Sprinkle lime juice over all. Toss around untilsoftened a smidge. Sprinkle with salt. People here liked it. Bethie Take Mail with you! Get it on your mobile phone. This reminds me of a Tuscan dish I've eaten - and I think I have a recipe somewhere - but I'm pretty sure it had no apricots - and probably no lime. Yours looks much nicer! What a wonderful experiment er recipe LOL I think the very best ones are the ones we find for ourselves as long as we love food. I'm going to try this next time we have kale.
