Two comments in advance: you can add as much curry as you like. 1 tsp makes a very mild curry flavor that I like. And, for the vegans out there, you can substitute either coconut milk (with the fat skimmed off) or the milk sub. of your choice. I hope that you all enjoy this. Stef SWEET POTATO SOUP 2 cups diced sweet potato 6 cups veggie stock (I just use the powdered stuff) 1 diced onion 2 cloves of garlic 1/4 cup flour (I use whole wheat) 1 tsp curry powder 3/4 cup skim milk In soup pot, saute onions and garlic in about 2 Tbsp of the broth until slightly limp. Add in the sweet potatoes and rest of the broth and simmer for about 30 mins or until everything is soft. While that is simmering, dissolve curry powder and flour in milk. Whizz up the soup with a hand blender or use a blender. Add in the flour, curry, milk mixture and fully heat. For 5 servings: 125.2 Calories, .42g fat, 24.86 carbs, 2.47 fiber, and 5.71 protein. I love sweet potatoes ;=) And yes, the note to vegans about skimming the fat off coconut milk is not misplaced. But ya know you can buy 'Lite' coconut milk too in some shops.
