I am just starting down the vegetarian path (yay me!). I work as a guidance counselor in a catholic school. Living at home with the 'rents for a while (hey, those student loans are a pain in the patootie to pay off!) and they're on the " lovely " atkins diet. So that makes eating at home a tad difficult. My dh of 8 years is a big time carnivore and my two kids are meat lovers too. Yuck. I just prepare vegan meals for myself and usually vegetarian meals for the family as well and let them get meat on their own time. I think i'd about die if my parents went on Atkins lol - good luck with that! I'd say just buy and cook veggie meals for yourself and get educated on why meat eating is both cruel and unhealthy - and why it's so nice of you mom to cook my dinner and i'm not being rude, but this is why i can't eat your artery clogging hunk of dead flesh - i'm sure http://www.notmilk.com http://www.vivausa.org http://www.factoryfarm.org/ and of course PETA can give you lots of ammo if your vegetarianism comes up for discussion. Who knows - maybe this time of you living at home can help convert them from steak to tofu Good luck! With someone on Fatkins if you're not on it yourself? You've gotta be joking LOL You might be peaceful, but they'll be adamant that their way is better and there goes the peace! Seriously, they'll love salads, you eat salads. They'll eat (some) green veggies, you eat em too. The student loan thingie suggests you're not going to be flush with funds for a while, so I suggest that, rather than buying ready-made veggie meals (though keep a couple in for emergencies - you can be sure they won't get eaten by mistake!), find a recipe of something that you like and can divide into one-person portions and freeze. Chilli freezes well, so do lentil and bean stews, etc. If you're going the ovo- lacto route, then things are a bit simpler in that you can steal their cheese, cottage cheese and eggs ;=) But true, you won't find much you want to eat in the house! Cooking and buying for one is tricky, but check through the recipes in our Files for some good ideas. Buy your bread or rolls as usual, but freeze in portions just right for you so you won't be throwing 90 per cent of it away and can make a sannie to go with your soup or salad while they eat whatever those people eat ;=( Freeze small portions of pasta sauce and cook your pasta and veg as you need them. Make your pot of brown rice then put in baggies in the freezer (trust you have a microwave oven) - blah blah blah. Otherwise, since you're not going to be able to convert the parents, I suggest you follow the same advice usually given to people of your parents' age when they become grandparents: 'Keep your mouth shut and your wallet open.'
