Living with Meat Eating Partners

Aurora,

I learned about nonfat evaported milk from Weight Watchers over 20 years ago.

It is a great way to get protein and calcium into the diet if you can tolerate

milk products.

Willie Birds are free range turkeys raised here in California--I believe in the

Sonoma County area. They are quite pricey [a 25 pound turkey was $43+], but I

cannot in all conscience feed anyone the commercial meats otherwise available

loaded with antibiotics and growth hormones. I buy all of the free range meats

and poultry for my husband at my local Coop here in Arcata and Eureka CA--their

corporate name is North Coast Cooperative. They also have organic eggs, milk

products, produce, sugar, flour, pasta, legumes, wine, beer, cosmetics, etc.

I find our local coop very helpful and would hate to depend on regular stores

for food. However, in other areas there are natural foods and health food

stores, but they do tend to be pricier.

My husband is actually quite fond of tofu. When I make bean and vegetable stews

he eats them, but then I keep sausages [locally made from our Coop] to add to

them for subsequent meals. I make a vegetable broth from vegetable cuttings and

use those to cook the beans. He has never asked for chicken broth. He isn't

much of a cook.

My husband is also type-II diabetic. We have found that the bean and vegetable

soups actually reduce his blood sugar, even though they may contain white rice

and/or pasta.

Hi Kathleen-

Your pie alternative actually sounds good. Evaoprated milk adds a

nice smoothness to everything. At the risk of sounding ignorant,

what is a Willie Bird and where did you get it? You see, my husband

is a " dyed-in-the-wool " carnivore and I do still include meat in his

meals, though I've tried to cut down on the content. I've searched

high and low for truly free-range meat options, but to no avail.

I'd go so far as to say I'd like to visit a farm to make sure the

animals really live free-range. Any suggestions? Of course, if

this is an inappropriate subject for the group, I'll understand if

the message is deleted. By the way, I have been able to convert my

husband to some homemade vegetarian soups (mostly by not mentioning

they're vegetarian), and he was very pleased with my

vegetarian " stuffing, " which I made with vegetable broth, an egg

(cage free and organic), bread cubes, and lots of sauteed

vegetables, then baked in muffin tins. Also didn't make a point of

their not containing chicken broth.

the turkey [free range Willie Bird]. For desert, there

were two kinds of pumpkin, chocolate and plain pecan, and

> apple pies. I like all of them, but only one was low enough fat,

sans the crust. I made it with evaporated nonfat milk and only two

eggs for two pies.
