Guest guest Posted November 27, 2004 Report Share Posted November 27, 2004 My local coop--North Coast Coop in Eureka and Arcata, California has a great selection of natural hummus and many other locally made vegetarian spreads, including tofu from our locally made organic tofu. These stores are the one the main reasons I continue to live here. I cannot imagine trying to be a healthy vegetarian and having to rely on commercial grocery stores. There are many flavoured versions in the shops - everything from tomato to pepper and whatever else they think of (our local supermarket had something llike 6 or 8 flavours at last count), but commercial ones aren't as nice as those you make yourself. I made up a batch the day before yesterday - just a simple version with 2 cups chickpeas to two or three Tbsp tahini, 3 or 4 cloves of garlic, juice of 1 or 2 lemons (I like mine garlicky and tangy), cayenne and salt. Whoosh it all up and lo and behold you have hummus to eat and some to freeze for another day. Some like a pinch of cumin or some coriander leaves / cilantro whooshed in there too.
