Guest guest
> Not knowing what hummus was I looked it up in google and ended up with >a fascinating site " foodnetwork.com " Ahhhh yes, the good old food network ;=) I'd forgotten totally about their encyclopedia (used to have it bookmarked on my old computer, but . . . ) so, many many thanks! I have not waited for you to add it but have added it now to the Links under Food Info and Tips or whatever it's called - where all the other food dictionaries and such are ;=) As for hummus, it's a wonderful food. Although used by many as a dip for crackers, chips/crisps, or crudites, it also makes a wonderful addition to many vegetarian sandwiches and, if thinned or thinly spread, can be used on toast instread of nut spreads or, er, stuff like Marmite and Vegemite. There are at least two versions of it in the Recipes, I'm sure. <goes to check> Yup, one posted by me as Chick Peas Spread and one from the BBC ;=) as Hummus. It's in the lunches folder. (Must make another folder.) There are many flavoured versions in the shops - everything from tomato to pepper and whatever else they think of (our local supermarket had something llike 6 or 8 flavours at last count), but commercial ones aren't as nice as those you make yourself. I made up a batch the day before yesterday - just a simple version with 2 cups chickpeas to two or three Tbsp tahini, 3 or 4 cloves of garlic, juice of 1 or 2 lemons (I like mine garlicky and tangy), cayenne and salt. Whoosh it all up and lo and behold you have hummus to eat and some to freeze for another day. Some like a pinch of cumin or some coriander leaves / cilantro whooshed in there too. Best, Pat ;=)
