Guest guest Posted November 17, 2004 Report Share Posted November 17, 2004 hi. thanks for the invitation to join your vegetarian group. i am a new vegan from the uk and im finding it a great experience..my only problem is im not sure quite how much fat im consuming! i seem to be frying more than ive ever done and its worrying me a bit! any advise on other methods of cooking which all seem to call for frying and not baking etc..thanks, helen... About frying - well, others will have other strategies, but mine are two-fold: to use as little oil as possible in a recipe, I use the stir-fry method on high heat. You don't need a wok, although I have used one in the past. A large frying pan or skillet does nicely as long as you have plenty of space to toss those veggies around, keeping them moving ;=) Alternately, I skip the oil altogether and pop the veggies into a pan and 'saute' or 'fry' them in a little veggie stock - there's a little difference in taste, but by the time I've added herbs and spices of various kinds, who'd know? ;=) I'm fond of vegetable stews - root vegetables or the more 'ratatouille' type, and I use little or no oil in preparing those. I also have a steamer. And also, on the rare occasion I eat my root vegetables whole, like to bake them in the oven in their skins, like a potato. You'll see that I totally sympathize with you, cuz when you read one of my recipes it usually starts out '1 Tbsp oil (or as little as you can get away with)' - which tells you where I'm at. Recipes on this list are intended to be low-fat, but of course sometimes . . . ;=) Have a look around the recipes, and ask any questions you like, okay?
