I promised this a million or so years ago..many lame apologies. Beth

 

Quinoa-Stuffed Poblano Chiles

4 5 " poblano chiles

1 1/2c water

3/4c uncooked quinoa

1/2c chopped green bell pepper

1/2c chopped red bell pepper

1/2c chopped onion

2tsp minced, seeded jalapeno

2 minced garlic cloves

1/2c minced scallions

2TB unsalted pumpkin seed kernels

1TB fresh or 1tsp dried cilantro

1TB soy sauce

1TB lime juice

2c tomato juice

1c shredded cheddar

cooking spray

 

Preheat oven to 350F. Cut chiles in half lengthwise; remove stems & seeds.

Set aside. Combine water & quinoa in a medium saucepan; bring to a boil.

Cover, reduce heat & simmer 13 min. or until liquid is absorbed. Set aside.

Spray a large nonstick skillet w/cooking spray; place over med-high heat until

hot. add bell peppers, onion, jalapeno & garlic. Saute 2 min. Add pumpkin

seed kernels, saute 2 min. Remove from heat. Stir in quinoa, scallions,

cilantro, soy sauce & lime juice. Spoon 1/3c mixture into each chile half.

Pour tomato juice into a 9 " x13 " baking dish; place stuffed chiles in dish.

Cover & bake @ 350F for 20 min. Sprinkle cheese over chiles & bake uncovered

for 10 more minutes or until cheese melts & chiles are thoroughly heated. Spoon

juice over chiles & serve.

 

**I used the red quinoa. The kids likened it to meatloaf & gobbled it up!

Good luck & let me know how it goes, ok? BTW, how old are your kids? My girls

are 4 & 7.
