Most restaurants put chicken fat and or broth and other things in their soups. Val Jamie Albright recipe - Tomato Bisque Hi, I went to Panera Bread this weekend in my hometown and they always have the best soups. They had a new seasonal one this weekend called Tomato Bisque. It was WONDERFUL Does anyone have any good recipes for this soup, I had never had it before. I have had some *horrible* experiences - in one place, I kid you not, they assured us, after discussing with the chef, that there was *no* meat or meatproducts, including stock or fat, including chicken (which to some chefs is not 'meat'), etc., and so we had a strongly flavoured mushroom and veggie soup with wonderful herbs and spices. And there, at the bottom of my big soup bowl, as I got to the second half of the chunky soup, was a piece of (I assume) chicken bone with skin adhering to it. They nearly had their soup returned to them in an unceremonious manner. We were away from home at the time - away from our own city/country - so we just pointed it out to the waiter then left. And yes we paid. Jetlag and cultural strangeness makes for submissive behaviour sometimes. BUT we have an Italian restaurant near us that the waitress *and* chef assure us uses NO animal products in its veggie soups, which are wonderful (twice tested now). Are we kidding ourselves?
