pecans! RECIPE!

Ok...you've got it...EMERIL'S SPICED PECANS

 

1/2 stick butter (x3 = 1 1/2 sticks)

1/2c brown sugar(x3 = 1 1/2c)

2c pecans (x3=6c)

salt, cayenne to taste

pinch each cinnamon & nutmeg

 

Preheat oven to 400F. In large sautee pan, melt butter. Add sugar & stir until

dissolved & bubbly. Add pecans. Season w/salt, cayenne, cinnamon & nutmeg.

Continue to cook, stirring constantly, until sugar starts to caramelize & coat

the pecans evenly. Cook about 4 mins. Remove from heat & spread pecans over a

parchment lined baking sheet. Roast about 6 minutes. Remove & cool completely.
