Guest guest Posted September 15, 2004 Report Share Posted September 15, 2004 My Husbands Favorite Stuffed Squash ~ My Version 3 Celery Sticks, chopped 3 Cups of Fresh Spinach ½ cup of Red & Yellow Peppers, chopped 1Teaspoon of Garlic 1 Bag of Morning Farms `Veggie Crumbles' 3 Vegetable Bouillon Cubes, crushed in powder 3 Pieces of Sourdough Bread, torn into bits 1Large Butternut Squash ( I have also used zucchini) If you don't have access to really large squash a group of small ones also work well. 1 cup of Milk Stuffing: Sauté Celery with a pinch of the crushed Vegetable Bouillon. Add Garlic and Spinach, cook until Spinach shrinks. Add Veggie Crumble and the rest of the Bouillon. Cook for a few minutes then add ½ cup of Milk and Bread bits. Boil milk until almost gone, then add the other ½ cup of Milk and cook until Stuffing is creamy and think. Set aside. Squash: Cut one side of the squash and use a spoon to scoop out the center. Be sure to get out all of the seeds. When the Squash is hollow spoon in stuffing and place in a baking pan. Add two tablespoons of water into the bottom of the pan and cover in foil. Bake for 30 minutes at 300 degrees then remove from oven and cover in your favorite cheese and place back in oven for 5 minutes. Allow to cool for a moment, cut a serve.
