Guest guest Posted August 23, 2004 Report Share Posted August 23, 2004 Pinto beans, stews, oatmeal (cooked overnight), and so on ... It saves my life when the kids have after-school activities. I can put something in the crockpot and know we'll have dinner ready when we get home. I take your point about the kids and the crockpot. also, another cyberpal says that in the summer she puts soup on and everyone can start helping themselves to it when they come home - when they're ready to eat - whether they're a bit hungry or a lot (or words to that effect, as I remember them). We use ours for beans, stews, soups, soups, soups. We like soup. > There's a nice vegetarian crockpot cookbook. Guest guest Posted August 23, 2004 Report Share Posted August 23, 2004 The two things I like to do in a crockpot are vegetarian chili (any recipe - anyone have a favorite one?) and this recipe: Crockpot Mixed Vegetable Bake Adapted from vegetarian southern crock pot recipes at http://southernfood.tqn.com 2 cans Creamed corn – 17 oz each 2 cans/bags frozen Green beans; cut – 16 oz each 2 cans/bags frozen Peas – 16 oz. Each 1 can Tomatoes – 17 oz ½ cup Mayonnaise (use Nayonnaise or other soy/no egg mayonnaise to make vegan) 1 tsp Tarragon 1 tsp Basil ½ tsp Salt Pepper Combine all ingredients in crock pot. Guest guest Posted August 23, 2004 Report Share Posted August 23, 2004 Thanks, Pat. It's been eventful here -- as you know, my e-mail crashed about two months ago. Well, on August 2, my hard drive "went south." I'm here as living testament to NEVER, EVER buy a Gateway product! It took until late last week (and my husband getting involved by calling Gateway corporate offices and getting bumped up to "executive response") to get a new hard drive. The computer is only six months old and is still under warranty. What a mess ... Now things aren't re-loading properly, so I'm off to call Geek Rescue today to come out and save me! Another point for using the slowcooker is it doesn't heat up the kitchen nearly as much as turning on the oven -- important for me, as our living room and kitchen areas face west and have huge windows and soaring ceilings. The result is nasty afternoon heat! The little book I have is called "The Vegetarian Slow Cooker," by Joanna White. It isn't the absolute best ever, but is a good starting point. Does anyone know of any others?
