Guest guest Posted August 11, 2004 Report Share Posted August 11, 2004 hi all, i thought id shari a recipe that i have made many times and it is very easy asnd delicious. although, im not sure how to rplace eggs for it tobe vegan, i dont know if they make a vegan egg substitute good for baking. YAM AND ORANGE BREAD 3 cups flour 1 tbsp bakng powder 1/2 tsp baking soda 1 1/2 tsp salt 1 tsp cinnamon 1/2 tsp nutmeg 2 eggs, slightly beaten 1 cup sugar 1 cup pureed cooked yams(ive used canned and fresh, they bot work well but if you use the canned make sure they ae drained first of any liquid) 1/2 cup orange juice 1 tbsp grated orange rind(zest, or orange part, only) 1/2 cup vegetable shortning, melted(ive used vegetable oil and it worked well...also you can sustitute it for 1/2 cup applesause for a low fat version) blend together wet ingredients in one bowl anddry in another. add dry ingredients to wet ones. this is a VERY siff batter so it takes a little work to blend together. grease and flour 2 loaf pans. devide batter between the two pans and bake at 350 degrees f forabout 1 hour or until a toothpick stuck in the center comes out clean. take out of oven and let sit for a few minutes then turn it out to cool completely....enjoy!
