Guest guest Posted August 10, 2004 Report Share Posted August 10, 2004 I made this yesterday for lunch. I took about 1 1/2 lbs zucchini, sliced it into rounds, and dipped the rounds into cold water. I layered these rounds in a deep skillet, and topped with 2 cups of spicey pasta sauce, & 1/2 cup of cool water. I added a pinch of salt and generous amount of pepper. Also added 1 small chopped white onion, and 1 large carrot, chopped. I brought this to the boil, then simmered for about 1 hour or so. Once the veggies were nice and soft, I added 2 cups cooked tortellini (filled with riccotta cheese), and 1 cup of chopped frozen broccoli. I let this simmer until the broccoli was warmed and the sauce had a great taste.
