Guest guest Posted August 5, 2004 Report Share Posted August 5, 2004 here is a very good recipe i make all the time thati actually got from the food channel on tv. it is really great and really easy. pasta primavera 1 green bell pepper 1 red bell pepper 1 zucchini 1 summer squash 2 medium carrots 1 vidalia onion (yes you need all of the veggies because the are mostly water and cook down considerably) olive oil salt and pepper to taste herbs de provence farfalle(bow tie pasta) parmesean cheese(can be omitted or substituted with soy cheese) slice all the veggies into strips. lay on cookie sheets( you might need several of these). drizzle with olive oil. sprinkle with salt pepper and herbs.bake at 450 degrees for 20-30 minutes cook pasta(you can use any type of pasta if you want instead of the bowties but i find that it works better with them) until al dente. toss all veggies with the pasta and cheese. for a lower fat version that i make, you can substitute the olive oil with olive oil flavored pam spray.
