In warm weather, above all, it is useful becaus= e it requires no cooking and is served chllled! It comes to you, unchanged, from Colin Spencer's _The Adventurous Vegetarian_ (1989) - which is unusual. But a soup this simple and delicious= cannot readily be altered without, well, altering it *lol*. Be sure to use = the lime zest as stated - it makes all the difference. AVOCADO AND LIME SOUP (JAMAICA) - VEGAN 3 ripe avocado pears zest and jice of 3 limes 1.2 litres (2 pints) vegetable stock sea salt and freshly ground black pepper 2-3 spring onions, finely sliced, to garnish Take the flesh from the avocadoes and place in a liquidiser with the lime z= est and juice. Add the vegetable stock to make a smooth purée. Season with salt and pepper. Serve cold and garnish with finely sliced spri= ng onions. Serves 4 to 6.
