Guest guest
I made these for breakfast this morning and all I can say is YUMMY! Easy to make and tasty too, my kinda breakfast. Next time I will try it with oat flour. Simple Whole Wheat Pancakes makes 16 3-inch pancakes 1 banana 1 1/4 cups soy or rice milk (I used Edensoy's soy and rice blend) 1 tablespoon of maple syrup (don't cheat with the fake stuff, use REAL maple syrup) 1 cup of whole wheat pastry flour 2 teaspoons of low-sodium baking powder 1/4 teaspoon sea salt In a large bowl, mach the banana, then stir in the soy milk and maple syrup. In a seperate bowl, mix the flour, baking powder and salt (I did it all in the same bowl) Add to the banana mixture and stir until smooth. Pour small amounts of batter onto a preheated, nonstick, lightly oil-sprayed griddle or skillet and cook until the tops bubble. Turn with a spatula and cook the second side about 1 minute. Serve immediately. Per pancake: 44 calories, 1g protein, 8g carbohydrate, 0 g fat; 9 mg. sodium, 0 mg cholesterol
