Carrot Soup 1 T olive oil 1 onion, sliced 1 lb carrots, peeled and sliced 2 potatoes, peeled and sliced 1 tomato, chopped 2 tsp minced ginger 6 c water sprinkle of coriander sprinkle of cardamom 1/2 tsp celtic salt (sea salt) 1 c. green soybeans, cooked 1/4 c almonds, ground Saute veggies in a dutch oven until somewhat browned. Add water and seasoning, and simmer 30 min. Puree in food processor. Stir in green soybeans. Serve with a garnish of ground almonds. Quote Link to comment Share on other sites More sharing options...
