Guest guest Posted May 26, 2004 Report Share Posted May 26, 2004 I made this salad for supper tonight, served on crusty french bread with thin slices horseradish cheddar cheese, and lots of fresh fruit. It is quite sharp and garlicy, but I thought it turned out great. 4 stem tomatoes, cut into thin wedges 1 cucumber, peeled, quartered, and sliced 1 c. fresh green beans, cut in 1/8 " slices 1/2 onion, minced 2 cloves garlic, minced and crushed (or to taste) 1/4 c red wine vinegar 1 T olive oil salt and pepper to taste Mix and let marinate 1/2 hour.
