I made this salad for supper tonight, served on crusty french bread

with thin slices horseradish cheddar cheese, and lots of fresh fruit.

It is quite sharp and garlicy, but I thought it turned out great.

4 stem tomatoes, cut into thin wedges

1 cucumber, peeled, quartered, and sliced

1 c. fresh green beans, cut in 1/8 " slices

1/2 onion, minced

2 cloves garlic, minced and crushed (or to taste)

1/4 c red wine vinegar

1 T olive oil

salt and pepper to taste

Mix and let marinate 1/2 hour.

Good Morning, Ranvaig! This sounds just like the kind of thing I like too ;=)

and I'm sure other members will want to try it. Very tasty, very healthy, very

slimming! *lol*

Thanks so much. I shall put it up in the Files section soonest - unless, of

course, you're feeling energetic and woould like to do so yourself? One of us,

anyway ;=)

Best (well, I'm not 'best' this early, but my best to you ;=))

Pat ;=)
