BBQ Tofu 4 servings 400 grams firm tofu 2 cups sliced zucchini 2 cups sliced carrots 1 med onion sliced 2 cups sliced mushrooms 1/4 cup BBQ sauce Either slice the tofu or dice it and put it in a large baking dish with the veggies. Pour sauce onto the mixture and gently stir to cover everything. If the sauce is really thick you can dilute it a bit with water.
