Guest guest Posted February 11, 2004 Report Share Posted February 11, 2004 Roasted Chickpeas 1/2 cup already cooked and rinsed chickpeas 1 tsp Extra Virgin Olive Oil juice from 1/8th of a lemon salt pepper garlic powder cumin powder cilantro flakes tsp sugar or 1/2 Splenda packet Pre-heat oven to 425 degees. In a bowl, coat the chickpeas with the lemon juice and olive oil. Sprinkle the above spices on the chickpeas or use your own combination. Place chickpeas on a baking sheet in a single layer. Cook for about 30 minutes, turning every few minutes. (Since they're chickpeas and round, you can just shake the pan to get them to roll.) Remove from the oven, salt them again, and let cool for about 5 minutes. These are great as a salad topping and a crunchy substitution for croutons. Great as a snack too.
