My family still eats their meat so I try to make side dishes for them that I will eat and this is what concoction I had. Brown rice, green peas, shredded cheese and sautéed onions (in olive oil) -- all mixed together. It was really good. For dessert, I made my own lighter version of sweet potato fluff. boil 2 or 3 large sweet potatoes in skin until tender cool just enough to be able to handle them (this takes a while because man do they get hot) peel (comes off easily with fingers) mash with a touch of butter, a little honey or sweetener of choice, a little vanilla and a big dash of cinnamon I served them in "fancy" dessert cups and they would be great with toasted nuts on top, but I wasn't willing to wait long enough to toast any.
