It can come as flour, 'milk' (also in powder form), tofu, the beans themselves, or made into other stuff - TVP is Textured Vegetable Protein from soy. Soy is low in carbs and high in protein - hence the value of tofu for people like, say, ballet dancers who need energy but have to keep their weight down. You'll also find soy in margarines, and in sauces like tamari and soy sauce ;=) They're usually dried (except I did see some fresh at our local farmers' market last year - didn't buy them for some reason ;=( but . . .).
