Checking back, I see we were chatting about tabouleh and hummus ;=) I

was sure that there was a tabouleh (parsley salad) recipe in the files,

but apparently not. My own version - or one of my own versions - of

tabouleh follow. You will note that as usual I omit the olive oil that

is commonly added to such a salad. (In our family we are careful about

fats and take them in other ways.) You would add about a tablespoonful.

 

TABOULEH-STYLE SALAD (Vegan)

 

This salad is quick and easy and keeps for a couple of days in the

refrigerator. Many make this dish with parsley. I am recommending a mix

of parsley and cilantro/coriander leaves here, but a mix of about

two-thirds parsley and one-third mint is also nice. I have even been

known to make it with all cilantro or all mint. The amount of

bulgar/cracked what can be adjusted according to taste. (I give the

amounts in American cups rather than ounces or grams, but any size 'cup'

would work because it's about proportion and the cook's personal taste.)

This recipe is infinitely variable.

 

One-half cup of Bulgar/cracked wheat

One cups Parsley, chopped, and One cup Cilantro/Coriander Leaves, chopped

One or Two Tomatoes, chopped, or equivalent amount Cherry Tomatoes, halved

Half an Onion, chopped, or five green onions/shallots, chopped

Juice of One Lemon (or to taste)

Zest of One Lemon, grated

Salt and Pepper (to taste)

 

Put the Bulgar into a small bowl and cover with boiling water, let stand

for 20 minutes, drain, cool, and squeeze out as much water as possible.

(If it still appears too wet, spread out on kitchen towels and blot.)

 

In a large bowl, mix together all ingredients and serve chilled.

 

So there you go. A bowl of olives, some flat bread, some hummus/ chick

pea dip (recipes in the files under Lunches), a little goat or soy

cheese, etc., and you have a feast. It's great for filling a pita bread

sandwich! Or, without all that, it makes a great salad alternative with

almost any meal. Don't *buy* it readymade - your own will taste much

nicer and be cheaper too!
