Someone was asking for recipes for hummus a couple of weeks or so back

and I have just been checking the files. There's a good recipe for it in

the Lunches section ;=) But I thought I might also share with you my own

version of hummus - or I should say many versions, because I make it a

little differently each time ;=) We use it a lot in our household - made

very thick so that it can be piled in sandwiches or to fill celery

sticks, made very thin so that it can be used as a sauce or dip, and

made kinda medium for use as a bread spread in place of fatty spreads

like butter or butter substitutes.

 

Traditionally, hummus is made with chickpeas (garbanzo beans), garlic,

tahini, lemon juice and seasonings/spices, served with olive oil poured

over it (some versions actually add it to the hummus when mixing it). In

our household, however, watching our weight, we have a different version

for everyday use which is much leaner (no tahini, no olive oil) and

therefore lower in calories (if anyone is counting them). I won't call

it 'hummus', but I will call it Chickpea Spread or Dip.

 

The proportions are notional, since seasonings and consistency, in this

case, are a matter of taste and anticipated use. You might want to cut

back on the garlic in order not to 'fight' with some sandwich fillings

when using in place of buttery spreads; you might want to increase or

decrease lemon juice and cayenne/tabasco likewise. If it comes out too

strong, simply add more garbanzo beans; it you want more zip, add more

of the other ingredients.

 

This is more or less how I make it most of the time.

CHICKPEA SPREAD/DIP (Vegan)

 

1 cup cooked chickpeas (garbanzo beans), drained

3 cloves garlic

dash of sesame oil (or to taste)

juice of one lemon (2 or 2 tablespoons)

one-quarter cup or more water (to your desired consistency)

shake of cummin

half tsp. cayenne (or to taste) - or use Tabasco and less lemon juice

salt and pepper

 

Put chickpeas, garlic, sesame oil, lemon juice in processor, adding

water a bit at a time to get the needed consistency. Add spices and

seasonings to taste.
